Niin kaksi viikkoa jälellä. Aurinkoista säätä tossa päivänä eräänä juhlistettiin lime-kookoskakulla. Alun perin piti Lime-unikonsiemenkakku oleman, mutta sattuneesta syystä ei kaupast löydetty unikonsiemeniä, niin kääntyi sitten tuohon mainitsemaani versioon. Hyvältä maistui näinkin, mutta jäi mielen pohjalle kutkuttamaan miten erilaiselta originaaliversio ois maistunu. :P Ehkä jonain päivänä.

125 ml milk
250 g butter, softened
1 tbsp finely grated lime rind
275 g caster sugar
4 eggs
335 g plain flour
110 g potato flour / corn flour (or 445 g plain flour)
1 tsp baking powder
240 g sour cream
Lime syrup
125 ml lime juice
250 ml water
220 g caster sugar
Preheat oven to moderate 180 °C. Grease base and sides of deep 23 square cake pan.
Combine poppy seeds and milk in small jug; soak 10 minutes.
Beat butter, rind and sugar in small bowl with electric mixer until light and fluffy. Add eggs, one at a time, beating until combined between additions; transfer mixture to large bowl. Stir in sifted flours, cream and poppy seeds mixture, in two batches. Spread mixture into pan; bake about 1 hour.
Meanwhile, combine ingredients for lime syrup in small saucepan. Stir over heat, without boiling, until sugar dissolves. Simmer, uncovered, without stirring, 5 minutes.
Stand cake 5 minutes, turn onto wire rack over tray. Pour hot lime syrup over hot cake. Decorate with some grated lime strips / shredded coconut.
